· 1/2 tsp dried herbs (basil, oregano, chives)
· 1/2 cup chopped veggies (peppers, onions, mushrooms, zucchini, asparagus)
· Optional: cheddar cheese, beans, tofu, your favourite breakfast protein

INGREDIENTS:
Cauliflower
Egg
Cheese
· sauce - Tomato sauce or pesto sauce
· FILLINGS: Add your favourites!

August 11: Sushi
INGREDIENTS:
· 4 cups cooked short-grain white rice (sushi rice)
(2 cups uncooked rice cooked in 4 cups water) COOK AHEAD.
· 1/2 cup rice vinegar
· 1 tablespoon vegetable oil
· 1/4 cup white sugar
· 1 teaspoon salt
· 4 sheets of Nori (seaweed paper)
1 Carrot
· Avocado
· 1/2 cucumber

Optional (imitiation crab, tuna, cooked shrimp)

August 18: Mexican Street Corn
INGREDIENTS
· 6 to 8 medium ears sweet corn, husks removed
· 1/2 cup Mexican crema, or sour cream
· 1/2 cup mayonnaise
· 1/2 cup minced cilantro
· 1 clove garlic, minced
· 1/4 teaspoon ground chipotle pepper, to taste
· 2 teaspoons lime zest, from one lime
· 2 tablespoon lime juice, from one lime
· 1/2 cup cotija cheese or feta, crumbled
· Lime wedges, to serve

INGREDIENTS:
● 3/4 cup sugar
● 2 eggs
* 2 TBSP vegetable oil
● 1 teaspoon vanilla extract
* 1/4 cup apple sauce or grated apple or greek yogurt
● 1 cup zucchini (300 g) or banana
● 1 1/4 cups whole wheat flour(230 g)
● 1 teaspoon baking powder
* 1/2 tsp baking soda
● ½ teaspoon ground nutmeg
* 1 tsp cinnamon
* 1/4 cup cocoa powder (optional)
● ½ teaspoon salt
● 1/4 cup dark chocolate chips or fun bits
● Garnish with flax seed, optional
