Mac 'n Cheese
Everyone loves a good Mac ‘n Cheese - even more when we make it more tasty and nutritious!
• 2 cups cauliflower (1 small head)
• 2-3 TBSP butter
• 3 TBSP flour
• 1 cup milk
• 3/4 cup (3 ounces) shredded cheddar cheese
• 1/2 tsp garlic powder
• 1 TBSP Dijon mustard – whole grain
• 1/2 tsp salt
• 1/4 tsp black pepper
• 2 cups uncooked macaroni
• 3/4 cup frozen green peas or Broccoli florets (optional)
1. Coarsely chop up the cauliflower.
2. Boil water in pot for pasta.
3. Cook pasta and cauliflower in the boiling water, for two minutes less than recommended on the pasta package so the pasta is al dente (chewy).
4. Cheese Sauce: Melt butter in skillet or sauce pan on medium heat.
5. Add flour and cook in the melted butter as a paste for 1 minute.
6. Gradually add 1 cup milk, stirring constantly with a whisk, but don’t let the milk boil. Cook for 3-5 minutes while stirring or until the sauce thickens.
7. Add salt, and pepper, garlic powder and mustard, stirring with a whisk until smooth. Then add the cheese.
8. Last minute that pasta cooks, add broccoli or peas so they turn bright green.
9. Strain boiling water out of pasta and vegetable.
10. Place pan over low heat. Stir cheese sauce into pasta, and vegetables and mix well until cheese sauce covered everything; cook for 1 minute or until thoroughly heated.
