April 19:

Grain Bowls

INGREDIENTS:

·   3 or 4 Bright colours of veggies:

Choose from:

carrots, Corn, cucumber, tomaotoes, peppers, celery, green onions, red cabbage, or your favourite

·  Protein: 1 can of Black beans or pinto beans, tofu, hard boiled eggs or cooked meat

·  Cheddar cheese or other cheese

·  1 Avocado (optional)

·  2 cups of Grain (cooked) – rice, bulgar, quinoa, barley, or pasta

·   3 tablespoons olive oil

·   Spices: cumin, smoked paprika, chili powder, cayenne (or to taste)

or Oregano, basil, garlic powder or your choice!

·   Salt & Pepper

· Lemon or Lime -juice or vinegar of any type

·  Honey or maple syrup

·  Cilantro or parsley for garnish (optional)

· Cutlery knife

April 26: Green Eggs and Ham

INGREDIENTS:

1 large avocado

eggs

spinach

ham (optional)

flour

parmesan cheese

pesto (optional)

salt

black pepper

Garnish: Salsa, ketchup, parsley

Serve with Toast

May 3: Mac & Cheese

INGREDIENTS:

macaroni or other uncooked pasta

butter

flour

milk

Dijon mustard

garlic powder

salt and pepper

cheese - cheddar, parmesan, pecorino or sharp tasting cheese

BRIGHT COLOURS: Pick 3

Cauliflower, broccoli, frozen peas

carrots, peppers, tomatoes

May 10: French Toast

INGREDIENTS:

Bread - slightly old

eggs

milk

sugar

salt

vanilla

cinnamon

butter

3 BRIGHT COLOURS:

Fruit salad or compote - apples, berries, pears, mango, kiwi, banana

Lemon juice

Toppings:

Vanilla or plain Greek yogurt

Icing sugar and lemon juice, or maple syrup

Hemp hearts or ground flax seeds (optional)

· Cutlery knife, longer plastic knife

May 17: Chocolate Brownies

We will make the traditional brownies, but a non-traditional vegan brownie recipe is included and if you prefer to make it, just notify Kathy via email before the class.

INGREDIENTS:

·       1 ½ cups flour

·       1 cup sugar

·       cocoa powder

·       baking powder

·       Salt

vanilla

butter, coconut oil or vegetable oil

Chocolate chips (optional)

Decorations: Sprinkles, nuts, hemp hearts, pumpkin seeds, coconut, fruits

INGREDIENTS:

Yeast

Olive oil

Tomato sauce or pesto

Seasonings: oregano, basil, garlic powder, chile peppers

Toppings: CHOOSE 3 BRIGHT COLOURS

Peppers, mushrooms, olives, pineapple, tomatoes, broccoli, onions, your favourite

PROTEIN: chicken, ham, bacon, pepperoni, your favourite

CHEESE: mozzarella, cheddar, parmesan, feta, goat or your favourite
