January 13:
Huevos Rancheros
INGREDIENTS:
· tortillas
black beans
tomatoes
salsa
avocado (ripe)
cheese - feta or cheddar
Eggs
Olive oil
Garlic or garlic powder
1/4 cup onion - yellow, white, red or green
Cilantro - fresh (optional)
Limes or lime juice
Seasonings: cumin, ground coriander, chile powder, salt, pepper
Sriracha sauce or hot sauce (optional)
Note: we will not make the pico de gallo together, but use salsa instead. You can make your own with Tomatoes, onion, garlic, vinegar, sugar, salt and cilantro

Homemade Pizza
INGREDIENTS:
Flour
Yeast
Salt
Sugar
Warm water
Sauce : tomato sauce, pesto, alfredo sauce or olive oil
Protein: Chicken, pepperoni, ham, bacon
Veggies:
Onion, mushrooms, zucchini, peppers, pineapple, olives, tomato
Cheese - mozzarella, cheddar, feta, goat, your choice!
Seasonings:
Garlic powder, basil, oregano, chile flakes
Special TOOLS:
2 bowls - 1 smaller, one larger with plate to cover top
Baking sheet or pizza pan
January 27:
Mediterranean Bean Soup
INGREDIENTS:
Butter or olive oil
garlic or garlic powder
Soup broth
Onion
Carrot
Celery
Baby spinach, kale or swiss chard
Optional Veggies-Choose from: potato, sweet potato, squash, zucchini
1 can of white beans - kidney or cannellini
Parmesan Cheese
Seasonings: bay leaf, thyme, oregano or marjorum, , salt and black pepper
Pasta - uncooked small pieces any shape (optional)
TOOLS:
·Large pot with lid

Homestyle Chicken Nuggets
Ingredients:
Chicken pieces - ideally skinless and boneless
flour
egg
breadcrumbs
salt
pepper
Oil
Special Tools:
Baking sheet
Parchment paper
Optional: Frying pan or air fryer
Feb 10:
Cinnamon Doughnuts
INGREDIENTS:
flour
· sugar - white and brown sugar
· baking powder
- baking soda
· salt
Cinnamon
Nutmeg
vanilla
butter
Icing sugar
Milk
yogurt
1 egg - room temperature
Special TOOLS:
doughnut pan or muffin tin
pastry brush
piping bag - small plastic ziplock bag
February 17:
Shepherd’s Pie
- vegetarian or meat option
INGREDIENTS:
· olive oil
· 1 yellow onion
· 500g lean ground beef or ground lamb or ½ cup each of red and green lentils
· parsley
· rosemary
· thyme
· Worcestershire sauce
· 2 garlic cloves -minced
· all purpose flour
· tomato paste or ketchup
· 1 cup soup broth or water
· 1 ½ cups frozen or fresh veggies: Choose 3 bright colours from green peas, corn, carrots, celery, zucchini, eggplant or your favourite
· 3 cups potatoes -about 2 large potatoes peeled and cut into cubes
· 1/4 cup butter
· 1/3 cup milk or cream
· salt & pepper
· 1/4 cup parmesan cheese
SPECIAL TOOLS:
Grater
2 pots
1 medium-large frying pan
Wooden spoon
Colander
Masher or large fork
Baking dish 8x10
March 3:
Cabbage Roll Casserole
Peppers can be substituted for Cabbage
INGREDIENTS:
chopped onion
2 cloves garlic, minced
1 lb minced meat (ground beef, pork or turkey)
1 TBSP Italian seasoning (oregano, basil)
salt, pepper
Worcestershire sauce
Cabbage (2-3 cups) or Peppers
Rice
Soup broth or powder broth
Cheese - cheddar (optional)
Tomato - crushed - 1 can or jar
Tomato paste
Lentils (red or green) -Optional
Meatloaf - no tomatoes, 1 egg, quick oats, but ketchup, mustard
Special tools:
Frying pan
Small containers for freezing individual portions
Muffin tin for meatloaf, small pot for lentils
March 10:
Bannock
We will be learning about the history of this recipe, which is often mistaken for a traditional Indigenous food
