April 4:
Chili
Vegetarian or meat option makes a hearty meal.
INGREDIENTS:
onion
garlic
oil
1 carrot
1 stalk of celery
Frozen or can of corn
1 tin tomatoes
1 tin kidney beans
cumin
salt
bay leaf
chili powder
Pepper
Optional:
Other beans (chickpeas, pinto beans)
Ground meat - beef, pork, turkey or chicken, sausage
Tofu or soy meat alternative
Sweet potato, squash or zucchini or other vegetable
Serve with: Bread or bun, rice, corn chips, cheese
SPECIAL TOOLS:
Large pot
Can opener
Strainer
Garlic press (optional)
April 11:
Mac & Cheese Balls
A great Mac’ n Cheese on its own or use leftovers to create a lunchbox treat!
INGREDIENTS:
butter
•all-purpose flour
• milk
•shredded cheddar cheese
•garlic powder
• Dijon mustard
• 1 egg
• salt • freshly ground black pepper
• macaroni or small pasta (about 225g uncooked pasta)
•CHOOSE your Bright colours:
frozen green peas, Broccoli, Cauliflower, beans, edamame, corn
• bread crumbs
Special TOOLS:
Large pot
Colander
Medium skillet or pot
Grater
Muffin tray
April 25:
Spaghetti with Meatballs
INGREDIENTS:
Veggies (choose up to 3): peppers, onions, mushrooms, zucchini, broccoli, spinach
Protein choose 1: ground beef, pork, chicken or turkey, or can of black beans
1 egg
Bread crumbs or oatmeal (optional)
Cheese - parmesan
Pasta - long or short pasta
Tomatoes - crushed, or diced 1 can or jar
Onion
Seasoning: garlic, Salt, pepper, Basil, Oregano or Italian Seasoning
Special TOOLS:
·1 medium skillet or medium pot
1 large pot for pasta
Colander
Baking sheet
May 2:
Chocolate Brownies
A delicious treat - try making the vegan brownies with us or traditional
Ingredients:
· butter or coconut oil
• brown sugar or honey or syrup
• 2 eggs or can of black beans
• vanilla
• cocoa powder
• flour or quick oats
• salt
• baking powder
Fun bits- Chocolate chips, walnuts, pecans, hemp hearts
* note: vegan brownies need some choc chips
Buttercream Frosting: (Optional)
3 TBSP butter, softened 3 TBSP cocoa powder 1 TBSP honey 1 tsp vanilla 1 cup icing sugar
Special Tools:
Baking dish, 8x8 pan or mini-muffin tin

May 9:
Flatbread Pizza
Easy crust recipe when you need one
INGREDIENTS:
· all-purpose flour
· baking powder
· 1 tsp salt
· baking soda
· 1 c plain Greek yogurt
· olive oil·
· Balsamic glaze, for serving (optional)
Vegetables : Choose at least 3:
Mushrooms, Sweet peppers, broccoli, spinach, olives, onions, tomatoes, red onion, zucchini, arugula, your favourite
Cheese: mozzarella, cheddar, feta, goat, your favourite
Extra Protein: chicken, ham, pepperoni, salami, bacon

May 16: Taco Salad Bowls
How much fun is it to make a bowl you can eat!
INGREDIENTS:
Soft tortillas - large
Olive oil
Lettuce (Romaine or Iceberg)
Roma tomato or grape tomatoes
1/8 red onion
fresh cilantro (optional)
½ Cucumber
1 Pepper
½ cup corn (optional)
Avocado (optional)
1 can black beans
Cheddar cheese
French or Catalina salad dressing OR
Cumin, Chile powder, Garlic powder, salt
1 lime
Corn chips
Special TOOLS:
Oven proof bowl - glass or metal

May 30:
Sushi
INGREDIENTS:
Nori
Rice- short grain
rice vinegar
olive oil
sugar
salt
Fillings: CHOOSE 3 BRIGHT COLOURS
cucumber, peppers, carrots, avocado,
(Optional) crab or imitation crab, tuna, salmon
Soy sauce
wasabi (optional)
pickled ginger (optional)
TOOLS:
1 pot with lid for rice
large shallow bowl to cool rice
Bamboo sushi rolling mat or clean tea towel

June 6:
Mini-Cheese Cakes
INGREDIENTS:
• Graham crackers or chocolate cookie crumbs or cookies that fits in muffin tin (oreo, sandwich cookie, ginger snaps, etc)
• butter or coconut oil
• Brown sugar
• 1/2 cup cold whipping cream or coconut cream
• 1 x brick (16 oz) full-fat Cream Cheese* softened to room temperature alternatives are greek yogurt, skyr, silken tofu
• white sugar or icing sugar
• 1 TBSP sour cream, greek or plain yogurt, at room temperature
• ½ tsp fresh lemon juice
• 1/2 teaspoon pure vanilla extract
• Toppings: Choose from fresh fruit, berries, whipped cream, jam, fruit, chocolate ganache, mint leaves
Special TOOLS:
Muffin or mini-muffin tin
Muffin papers or liners
Electric blender for whipping cream
Plastic bag & Spoon, or food processor or blender to make crumbs if necessary
