TOOLS NEEDED for EVERY Class:

  • Apron

  • Water to clean produce

  • Cutting board

  • Spoons, fork

  • Cutlery knife

  • Medium & Large Mixing Bowls

  • Food waste bowl

  • Measuring cups and spoons

  • Plate

  • Cleaning cloth

  • Soapy water in sink

October 10: Chocolate Chip Muffins

INGREDIENTS:

·       1 ½ cup mashed banana, or grated apple, zucchini or carrot

·       1 egg

·       ½ cup butter, melted

·       ½ cup brown sugar

·       1 ½ cup flour

·       1 tsp baking soda

·       1 tsp baking powder

·       ½ tsp salt

·       Extras: ½ cup chocolate chips, ½ cup blueberries, or 1 tsp cinnamon

·       Optional: glaze or cinnamon sugar

October 17:

Apple Blossoms

INGREDIENTS:

·      4 Apples

·      Short crust pastry-frozen

·      ¼ cup butter

·      ½ cup brown sugar

·      1 tsp cinnamon

·      ½ tsp pumpkin spice or nutmeg (optional)

·      1 tsp lemon juice (optional)

·      1 TBSP milk

·      1/2 tsp corn starch

CARAMEL SAUCE:

·      ¼ cup butter

·      1 cup brown sugar

October 24: Pumpkin Pie

INGREDIENTS:

·      3 eggs

·      2 cups of cooked mashed pumpkin (fresh pumpkin)

·      1 cup of brown sugar or ¾ of white sugar

·      ½ tsp salt

·      ½ tsp ginger

·      1 tsp or more cinnamon

·      ¼ tsp cloves (ground)

·      1 ½ -1 tsp nutmeg

·      1 -1 ½ cups of evaporated milk or whipping cream

SPECIAL TOOLS:

·      9” pie crust/pan

·      Oven mitts

October 31: Halloween Cupcakes

INGREDIENTS:

• 1/2 cup sugar

• 1 TBSP vanilla

• 2 eggs

• 1/3 cup milk

• 1/2 cup butter or coconut oil

• 1 1⁄2 cups flour

• 1 TBSP baking powder

• 12 large Strawberries

• 12 small layer cookies (oreos, vanilla/chocolate crème fruit crème)

FROSTING:

• 3 TBSP butter

• 1 cup icing sugar

• 1 tsp vanilla

• Food colouring

• Decorations –eg. coconut, candies, dried strawberries, marshmallows, food colouring

Focaccia

INGREDIENTS:

• 1 tsp Yeast 

• ½ tsp honey or sugar 

• 1 tsp Salt 

• 2 3/4 cups Flour 

• 1 cup warm water 

• 4 TBSP Olive Oil 

• 1 TBSP coarse salt 

• Fresh rosemary 2 sprigs 

• Seasonings: rosemary, basil, oregano (optional) 

• Toppings: olives, tomatoes, cheese (optional)

November 21: Irish Soda Bread

INGREDIENTS:

·        ¾ cup buttermilk or 1 TBSP lemon juice or vinegar plus milk

·       1 large egg (optional)

·       4 ¼ cup flour

·       1 tsp baking soda

·       3-4 TBSP sugar

·       1 1/2 tsp salt

·       4 TBSP cold butter

·       1 cup raisins or currents (optional)

·       1 tsp orange zest or cardamon seeds (optional)

November 28: Holiday Shortbread Cookies

INGREDIENTS:

• 1/2 cup butter – at room temperature 

• 1/2 cup white sugar 

• 1 cup flour – all-purpose 

• Pinch of salt 

• 1/2 tsp vanilla 

• ½ cup semi-sweet chocolate – baking chocolate bar, wafers or chocolate chips 

• Sprinkles or candy canes to decorate
