Kitchen Sink Cookies

INGREDIENTS:

●      all-purpose flour

●     baking powder

●     salt

●       1 cup butter (or 1 cup coconut oil)

●       1 cup brown sugar – loosely packed

●       ½ cup white sugar

●       vanilla extract

●       1 egg (or 1/4 cup applesauce, or 1/4 cup aquafava)

●       1 ½ cup fun bits e.g. chocolate chips, cut up candy bars, cacao nibs, hemp hearts, nuts, seeds, crushed up potato chips, pretzels, dried fruit, cereal, raisins, marshmallows, sprinkles, or your favourite)

Flakey or coarse salt to sprinkle on top (optional)

GINGERSNAP COOKIES

INGREDIENTS:

●     butter or margarine-at room temperature

●     1 egg

●     molasses (or corn sryup or maple syrup)

●    icing sugar

●     flour

●     baking soda

●     salt

●     cinnamon

●     ground ginger

●     nutmeg

●     cream of tartar (for crispy cookies)

Optional-Decorative Fun bits:  Raisins, sprinkles for decoration

White Chocolate & Almond Thumbprint Cookies

INGREDIENTS:

all-purpose flour

baking soda

salt

butter or coconut oil

white sugar

brown sugar

1 egg

vanilla

seedless raspberry, strawberry jam or grape jelly

White chocolate chips

almonds - whole or pieces

icing sugar

milk

*** Substitute an extra 1/2 cup butter if you want to make Buttery thumbprint cookie. Can make it vanilla, lemon or chocolate flavoured (add lemon juice & zest or cocoa powder)

Fun Cookie coatings: shredded coconut, other nuts,

coarse sugar, chocolate cookies crumbs

Confetti Squares

INGREDIENTS:

●        ½ cup butter                                                                                         

●        1 cup peanut butter or soynut butter

●        8 oz pkg butterscotch chips (1 cup)

●        1 cup shredded coconut

●        3 cup miniature coloured marshmallows

●        Fun Bits Optional: ½ cup nuts, seeds, hemp hearts for added nutrition

Substitutions:

Wow butter for peanut butter

Chocolate chips for butterscotch

Plain small for colours marshmallows

Fried chow mein noodles or Nuts or seeds for marshmallows

Chocolate Brownies with Frosting

INGREDIENTS:

See above recipes - option to do traditional or BLACK BEAN brownies!!

INGREDIENTS:

Traditional Brownies or Black Bean Brownies

WET INGREDIENTS:

Fat: ½ cup butter or  ¼ cup coconut oil

Sweetener: ¾ cup brown sugar or 1/3 cup honey or maple syrup + 1 TBSP

 Protein: 2 eggs or 1 can black beans

DRY INGREDIENTS:

Carbohydrates: ½ cup flour or ½ cup quick oats

Flavourings:

1 tsp vanilla *  (add with liquids)

1/3 cup cocoa powder

¼ tsp salt

½ chocolate chips

Leavening agent: ¼ tsp baking powder

(optional) Fun bits: Walnuts, peanuts, hemp hearts, sprinkles

Icing:

Icing sugar, butter, milk, cocoa powder

Special Tools:

Baking pan 8x8 or 9x13 for double batch

Shortbread Cookies

INGREDIENTS:

●        1 Cup Butter(Softened)

●        ½  Cup Powdered sugar

●        ¼  Cup Cornstarch

●        1 ½  Cups Flour

●        Coarse sugar crystals (optional)

Fun bits: to decorate with

Sprinkles, choc chips, candies, melted chocolate

Icing - for glaze or drizzle (optional)

Icing sugar, milk (food colouring)

SUGAR COOKIES

INGREDIENTS:

★    butter room temperature

★    granulated sugar

★    vanilla extract

★    1 egg

★    flour

★    baking powder

Icing sugar

Milk

Optional: Food colouring, raisins, choc chips or sprinkles and small candy decorations

Crinkle Cookies

These cookies can be made as molasses crinkles or chocolate cookies by switching the spices for coco powder, and altering the sweetener

INGREDIENTS:

●       butter at room temperature                                                                                         

●       brown sugar

●      white sugar

●       1 egg

●        vanilla

●        flour

●        baking soda

●        salt

●        cinnamon, nutmeg, ginger, cloves or coco powder
