: Minestrone Soup
We will be making a favourite family meal or lunch for yourself with homemade Mac & Cheese! Find out how to make it super tasty, and add some good nutrition too.
INGREDIENTS:
butter or olive oil
1 medium onion
1 stalk celery
2 carrots
2 cloves garlic
2 medium potatoes (optional)
1 can cannellini beans or kidney beans or chick peas
Green cabbage or kale
1 can tomatoes
1 liter of vegetable broth or 4 cups water, 1 TBSP soup bouillon powder
Pasta - small pieces (Eg. macaroni)
Parmesan cheese - piece of waxy rind
Seasonings: Salt, pepper, bay leaf, dried basil, parsley, oregano, marjoram (optional)
Special equipment:
Large heavy bottom pot with lid
