February 2:

Vegetable Pot Pie

INGREDIENTS:

·        Vegetables : Choose at least 3: 2-3 cups

CHOOSE from: Mushrooms, Sweet peppers, Celery, Green peas, Broccoli, Carrots, Squash , potato

• 2 cups cooked turkey or chicken (Vegetarian version – use Mushrooms and extra veggies)

• 2-3 TBSP Butter

• 3-4 TBSP Flour

• 1 cup Vegetable stock

• 1 ½ cup Milk or Cream

• ½ tsp salt

• ½ tsp celery salt

• ¼ tsp cayenne pepper

• Black pepper (to taste)

• 1 package of frozen puff pastry (pre-rolled) or 2 pie crusts, thawed

• 1 TBSP milk or beaten egg

******* If you don’t have the pastry, you can serve this with rice or another grain instead

February 3: Indian-style - Channa Masala (Chickpea & Tomato curry)

INGREDIENTS:

2 medium-large onions (about same as amount of tomatoes)

1 can chick peas

1 can tomatoes

Garam masala

salt

Garlic

Ginger

Garam masala or channa masala spice

Serve with:

Rice

Pappadums (optional)

Chutney

Yogurt (if young children find it spicey)

Pulled-Pork Style sandwiches

Save time with the vegetarian version or try pork tenderloin for meaty version

INGREDIENTS:

·       Olive oil

·       medium Onions

·       water

·       green lentils

·       red lentils

·       Garlic powder or 1 clove garlic

·       shredded carrots

·       mushrooms, finely cut

·       smoky paprika (or paprika and liquid smoke)

·       brown sugar

·       Salt and pepper

·       ¾ cup Barbeque sauce*

·       4 Buns - Kaiser buns, whole wheat or ciabatta

Coleslaw: cabbage, carrots, green onions, cider vinegar

Barbeque sauce: ketchup, mustard, sugar, Worchestershire sauce, chile powder

2 to 3 cloves garlic, minced

Cheese - mozzarella, cheddar, feta, or goat

 COLOUR OPTIONS: ½-1 cup each

o   Green veggies – broccoli, peppers, spinach, zucchini, olives

o   Red veggies – red peppers, tomatoes

o   Yellow veggies – yellow peppers, pineapple

o   White veggies – mushrooms

1 small onion, chopped

Fresh herbs: thyme, rosemary, sage

February 24: North African-style Shakshuka

INGREDIENTS:

·        olive oil

·        1 large yellow onion

·        1 large red bell pepper

·        fine sea salt

·        3 cloves garlic

·        tomato paste

·        ground cumin

·        ground coriander

·        smoked paprika

·         red pepper flakes or cayenne pepper OR harissa paste (optional)

·        1 large can (28 ounces) crushed tomatoes

·        fresh cilantro or flat-leaf parsley

·        spinach or kale chopped(optional)

·        Freshly ground black pepper, to taste

·        4 to 6 large eggs  (1-2 eggs per person)

·        crumbled feta

March 2: Tri-Colour Jacket Potatoes or Hasselback Potatoes

INGREDIENTS:

Potatoes - yellow flesh if possible

Medium potato (1 per person)

Salt and Pepper

CHOOOSE 3 Colours:

·        Green:  green onion, or kale or parsley, spinach, zucchini

·        Red:  red pepper, grape tomatoes, red kidney beans

·        Yellow:  Frozen corn niblets, yellow pepper, chick peas

- Orange: Carrots, orange pepper, frozen squash

Cheese

Protein options: ham pieces, bacon pieces, hard boiled egg, beans,

March 3: Mexican-style

Tamale Pie

INGREDIENTS:

·        2 medium onions

·        1-2 bell peppers of any color

·        garlic (2-3 cloves)

·        1 can black beans or other beans (1 1/2 cups cooked)**

**Protein option: ground beef, ground pork or ground chicken

·        corn - frozen or can

·        1 can diced tomatoes (15 oz)

·        1 cup shredded cheese – Monterey jack or cheddar 

·        ground cumin

·        chili powder

·        salt

·        jalapenos or green chiles (optional) 

·        Masa harina or 2/3 cup cornmeal plus 1 1/3 cup flour

·        baking powder

·        butter or canola oil

·        lime juice

·        water or broth (vegetable or chicken)

Serve with sour cream, fresh cilantro

·       dried herbs (basil, oregano, chives)

·       veggies : Choose 3 from:

peppers, onions, mushrooms, zucchini, olives, tomatoes, your favourite!

·       tomato sauce

·        2 whole wheat flour tortillas per serving

·        Mozzarella or cheddar cheese

March 17: Shepherd’s Pie

HAPPY ST. PATRICK”S DAY!!

INGREDIENTS:

·        2 tablespoons olive oil

·        1 yellow onion

·        500g lean ground beef -or ground lamb or ½ cup each of red and green lentils

·        parsley

·       rosemary

·       thyme

·       salt

·       ground black pepper

·       Worcestershire sauce

·        2 garlic cloves -minced

·        all purpose flour

·        tomato paste or ketchup

·        1 cup soup broth or water

·        1 ½ cups frozen or fresh veggies: Choose 3 bright colours from green peas, corn, carrots, celery, zucchini, eggplant or your favourite

·        3 cups potatoes -about 2 large potatoes peeled and cut into cubes

·        butter 

·        milk or cream

·       parmesan cheese

·        12 slices of bread - slightly stale is perfect

·        2 cups cheddar cheese or sharp flavoured cheese plus 2 TBSP

·        6 eggs

·        2 cups milk

·        Worcestershire sauce (optional)
