Quick Bread (aka Banana Bread or Pumpkin loaf)
Ingredients:
● ¾ cup sugar
● 2 eggs
● 2 TBSP vegetable oil
● 1 teaspoon vanilla extract
● 1 cup banana, pumpkin squash or zucchini
● ¼ cup apple sauce
● 1 1/4 cups whole wheat flour(230 g)
● 1 tsp baking powder
● 1/2 teaspoon baking soda
● 1 teaspoon ground cinnamon
● ¼ cup cocoa powder (optional)
● ½ teaspoon salt
● 1/4 cup fun bits like chocolate chips, raisins, seeds, nuts, hemp hearts
Garnish with flax seed, oatmeal or fun bits (optional)
Substitution: Use what you have!\
Fruit: banana, apples, cooked or canned pumpkin or squash, zucchini or carrot
Whole wheat or all-purpose flour, any Gluten-free flours, spelt or almond flour
Vegetable oil or butter or coconut oil
Apple sauce -mashed banana

Minestrone Soup
INGREDIENTS:
4 TBSP butter
1 medium onion
1 stalk celery
1-2 medium carrots
2 cloves garlic
1 can beans or chick peas (red or white kidney beans)
1/2 cup cabbage or kale
1 can tomatoes
1 tablespoon tomato paste (optional)
1 1/2 cups potato chunks
1 liter of vegetable broth
2 tablespoons dried parsley and oregano, basil, marjoram
Salt
1 cup macaroni (uncooked) or fun pasta
1/2 cup grated Parmesan cheese

INGREDIENTS:
2 cups flour
2 ½ tsp baking powder
1 tsp salt
¼ tsp baking soda
1 cup milk
⅓ cup butter
Optional flavourings:
Sweet: Cinnamon, sugar, raisins, choc chips
Savoury: Cheese, garlic powder, oregano, basil, chives, olives, jalapeno peppers
