Oatmeal Squares

INGREDIENTS:

·       ½ cup butter

·       3/4 cup brown sugar

·       2 cups oatmeal

·       1 tsp baking powder

·       1 tsp vanilla

·       ¼ tsp salt

¼ cup chocolate chips

Fun bits: Choose 3 or four to make up to 1 cup

raisins or dried cranberries,

seeds – pumpkin, sunflower, hemp hearts,

nuts -walnuts, pecans, almonds or peanuts

chocolate chips, M&M’s, sprinkles

INGREDIENTS:

·   sugar

·   cocoa powder

·   baking soda

·   salt

white vinegar

vanilla

butter, coconut oil or vegetable oil

February 18: Crazy Crackers

INGREDIENTS:

Crackers - CHOOSE at least 2:

wheat crackers, rice crackers, seed crackers, flour crackers

Spreads: CHOOSE at least 3

Cream cheese, avocado, peanut butter, wow butter, butter, mayonnaise, jam, honey, hazelnut butter, hummus

Toppings: CHOOSE at least 3

Cucumber, grape tomatoes, apples, bananas, blueberries, cheese, carrots, pumpkin seeds, pickles, raisins, sunflower seeds, almonds

February 22: TexMex Dip

INGREDIENTS:

Can of refried beans

●1 avocado (or 2 small)

● 1 lime

● ½ cup sour cream

● cumin

● garlic powder

● salt

● chile powder

● cheddar cheese

● 1 tomato

● 1-2 green onions

● black olives - pitted

Corn chips, crackers or veggies to dip like celery, carrots, cucumber, peppers

February 25: Pizza Rolls

INGREDIENTS:

·       Tortillas – whole wheat, small or medium

Sauce:

Red Sauce: Tomato sauce, Pureed or Crushed tomatoes

OR Green Sauce: Pesto

·       Seasonings:  oregano, basil, garlic powder

1 handful Veggie Toppings: Choose at least 3

Bananas, apples, pears, berries, raisins,

March 4: Rainbow Pinwheels

INGREDIENTS:

Tortillas - soft flour -any colour or couple of colours

Bread - few slices

Spread - Cream cheese, hummus, peanut butter

At least 3 Bright Colours: Choose from

Green: Spinach, Cucumber, Celery, Lettuce, Zucchini

Red: Red pepper

Orange: Carrots, Orange pepper

Yellow: Corn, Yellow pepper, chick peas

Purple: Red cabbage

Rolling pin or smooth can (optional for bread)

INGREDIENTS:

·       Pizza base: Long bread rolls, hot dog buns or zucchini or squash

·       Sauce: tomato puree, pizza sauce, pesto

·       Seasonings: oregano, basil, garlic powder, chile powder

·       Favourite toppings:  PICK at least 3!

o   peppers

o   zucchini

o   Olive slices – black or green

o   Small Pineapple chunks

o   Green Onion

o   Tomatoes

o   Protein of your choice

·       Cheese – mozzarella, cheddar, feta, goat or your favourite
