Fluffy Pancakes

Ingredients:

flour

salt

baking soda

1-3 eggs

milk

butter

Syrup or lemons and icing sugar

Fresh fruit - Choose 3 colours:

bananas, berries, apples, pomegranate, pineapple

Fun toppings: Hemp hearts, choc chips, seeds or nuts,

Greek yogurt (adds protein) or whipped cream

Super Power Avocado Toast

INGREDIENTS:

1 large avocado

1 clove garlic

2 TBSP Lime or lemon juice

½ tsp chives (optional)

salt

Black pepper

Grated cheddar cheese (feta, goat cheese or cottage cheese)

salsa (tomatoes and onions)

1 egg per slice

½ cup Chickpeas (soft - from can or cooked)

olive oil

cumin

paprika or chile powder

French Toast Casserole

INGREDIENTS:

8 pieces of bread - or uncut loaf - slightly stale bread is perfect

Butter

eggs

Milk

Brown Sugar

Cinnamon

Salt

Fruit - 1 cup of apples, blueberries, banana or your choice

nuts (optional) -Pecans, hemp hearts

Serve with:

Fruit salad or mixed berries, maple syrup,

Favourite protein (eg. Greek yogurt)

●      Hollandaise Sauce : Premade Hollandaise packet or make our own

●      4 egg yolks

●      2 tsp lemon juice

●      1 tbsp water

●      1/2 tsp salt

●      ½ cup butter

INGREDIENTS:

·        all-purpose flour

·        3 Tablespoons granulated sugar

·        salt

·        1 package instant yeast 1 packet = 2 and 1/4 teaspoons

·        water

·        milk

·        butter, softened to room temperature

·        1 large egg

·        ground cinnamon

·        brown sugar

 powdered sugar (icing sugar)

·        vanilla extract

Optional: Raisins, dried fruit, nuts, seeds, hemp hearts

●       2 eggs (per person)

●       2 Avocados - ripe

●       Lime juice

●       6 Grape Tomatoes or Salsa

●       Optional Protein:  Black beans, Refried beans, ham, bacon, sausage, or ground pork

●       ½ tsp Cumin

·       1/2 cup grated or crumbled cheese (cheddar, feta, mozzarella)

·       herbs (basil, parsley, cilantro, or dill)

2 cups veggies: Choose from 3 bright colours:

Tomatoes, peppers, green onions, zucchini, red onion, broccoli, spinach, cauliflower, mushrooms, kale
