Crunch Plate and Kale Chips
INGREDIENTS:
· 1 small bunch kale
· 1 TBSP olive oil
· ¼ TSP salt
Seasonings: (optional)
Nutritional yeast, dried herbs - oregano, basil, cumin, paprika, garlic powder, Parmesan cheese
2 Bright Colours - choose at least one from
1. Fresh veggies: Peppers, carrots, cucumbers, celery or other favourite
2. Seeds and nuts: pumpkin seeds, sunflower seeds, almonds, peanuts or other favourite

Deviled Eggs
INGREDIENTS:
6 eggs
• 2 TBSP Dijon mustard
• 2 TBSP mayonnaise
Salt & Pepper
• green and red peppers or black olives
• carrots
• Sliced almonds (optional)

Healthy Muffins
INGREDIENTS:
3/4 cup mashed banana or grated apple or zucchini or carrot
1 egg
1/4 cup butter or coconut oil
3/4 cup flour
½ cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
Optional: 1/2 tsp cinnamon
Fun bits: Use ¼ cup total: You can mix and match!
Choose from Raisins, Choc chips, frozen blueberries or raspberries.

Pasta with Marinara Sauce
INGREDIENTS:
olive oil
1 small yellow onion, finely diced
2 to 3 cloves garlic, minced
1 (28-ounce) can diced tomatoes or pureed tomatoes
1 bay leaf
salt
Fresh thyme, basil, oregano
Parmesan cheese
Optional - add ground meat or plant protein to make a Bolognese sauce
Add some veggies to add nutrition: Mushrooms, Peppers, carrots, celery, zucchini
Pasta - uncooked - your choice of style
Serve with:
Caesar Salad - Romaine lettuce, croutons, Parmesan cheese, dressing, bacon (optional) Add some bright colours for added nutrition - eg. carrots, cucumbers, peppers, tomatoes
Garlic bread - loaf of bread, butter, garlic clove or garlic powder

· 2 eggs beaten
· 1/2 tsp dried herbs (basil, oregano, parsley, or chives)
· 1/2 cup veggies (Choose 3: peppers, onions, mushrooms, zucchini, or asparagus, tomatoes or your favourite)
· Optional: cheddar cheese, feta cheese, beans, tofu, ham, chicken, your favourite protein
You can make as many as you like, just multiply the ingredients

lettuce - softer leaf type like leaf lettuce, spinach, boston lettuce if possible

Glass noodles - very fine rice noodles (optional)
Rice paper (round disks)
Sweet Thai chili sauce or Teriyaki sauce
Protein options: Tofu, hardboiled egg, or
Cooked shrimp, chicken or beef strips

FRENCH TOAST with FRUIT Compote
INGREDIENTS:
8 Thick Slices of bread
● 3 Eggs
● ⅔ Cup Milk
● 1 tsp sugar (optional)
● Cinnamon (optional)
● Vanilla (optional)
Fruit - choose 2 or 3 - fruit past its best is perfect
Apples, pears, berries, peaches, mango, your favourite
Toppings: Icing sugar and lemon juice or syrup, greek yogurt
