April 5:
Jacket Potatoes
INGREDIENTS:
Medium potatoes (1 per person)
butter
Salt, Pepper
Choose 3 bright colours:
· Green: green onion, broccoli, spinach, kale or parsley
· Red: red pepper, grape tomatoes
· Yellow: Frozen corn niblets, yellow pepper
* Orange: carrot, orange pepper, frozen squash
* White/Brown: mushrooms, onion, cauliflower
Protein: Choose at least one
* Cheese
* Kidney beans, black beans or refried beans
* Cooked chicken, ground meat or hard boiled egg
Serve with sour cream, bacon bits, green onion, or chives

Banana Bread
INGREDIENTS:
· brown sugar
● 2 eggs
●butter or vegetable oil
● vanilla extract
● 2 ripe bananas
● apple sauce or small apple
● flour - all-purpose or whole wheat
● baking soda
● ground cinnamon
● all spice (nutmeg & cloves) or pumpkin spice
● salt
● fun bits like chocolate chips, raisins, seeds, nuts

April 19: Fajitas
INGREDIENTS:
Soft Tortillas – medium or small
● 1 TBSP Vegetable oil
● 1 onion
● 3 cloves garlic or 1 ½ tsp minced garlic
● 1 large bell pepper
● 1-2 portbello mushrooms or favourite protein (black beans, chicken sliced, or beef slices)
● 1 lime
● Cumin
● chile powder
● smoked paprika
● salt
● black pepper
TOPPINGS:
● 1 cup Cheese – grated
● 1-2 Avocados - ripe
● Tomatoes or Salsa
● fresh cilantro
● Sour cream (optional)

April 26: Stir Fry with Teriyaki Sauce
INGREDIENTS:
CHOOSE 3 BRIGHT Colours:
· Green veggies – broccoli, green beans, celery, snow peas
· Red veggies – red peppers
- Orange veggies - carrots, orange peppers, squash
· Yellow veggies – corn, yellow peppers, zucchini
· White veggies – onions, garlic, water chestnuts
PROTEIN: CHOOSE 1:
- Tofu, Chicken, Beef, Pork, Shrimp
Sauce: Your favourite stir fry sauce or
Make your own Teriyaki:
· soy sauce, brown sugar, honey, water, corn starch,
garlic, ginger
Optional Mirin, sesame oil
Rice - basmati, jasmine, brown rice or long grain white rice

How to make rice
May 3: Quiche with Sweet Potato Crust
A crust makes it a quiche which we will make from potato, sweet potato or squash. Works well either grated or cooked and mashed.
INGREDIENTS:
3-4 cups Potato or sweet potato or squash (freshly peeled or cooked or frozen)
Butter
4-6 eggs
• milk or almond milk
• baking powder
• flour
• 2 cups vegetables Choose from 3 bright colours:
Tomatoes, peppers, green onions, zucchini, red onion, broccoli, spinach, cauliflower, mushrooms, kale
• cheese (cheddar, feta, mozzarella)
• salt & pepper
• herbs (basil, parsley, cilantro, or dill)

May 10: Homemade Pizza
Flour
Yeast
Sugar
Salt
Olive Oil
Warm water
Tomato Sauce or Pesto sauce
Seasonings: Garlic powder, oregano, basil, chile flakes
Toppings:
Protein: Cheese - mozzarella, cheddar, feta, goat
Other protein of your choice - pepperoni, salami, chicken, cooked bacon
Colourful toppings: CHOOSE 3 colours
Green: peppers, spinach, kale, olives, zucchini
Red: tomatoes, peppers, roasted peppers, sundried tomatoes
Yellow: peppers, pineapple, zucchini
Black or purple: Olives
Brown or white: Mushrooms
Your favourite topping!
